It's actually not that hard to be a type 1 diabetic vegetarian - I was one for 16 years! All I would say is that it's also very easy to eat too much starchy carbohydrate at the same time.
One recurring theme on the forum is that restricting carbohydrates is the best strategy for long term health and control. This is where being a low-carb type 1 diabetic vegetarian becomes difficult.
Difficut, but not impossible. I'd recommend a recent book by Rose Elliot entitled 'The vegetarian low-carb diet.' That will give you lots of good advice, ideas and recipes too.
