I have noticed that every time I eat just one boiled egg, my bg goes down a little - for example it is 6.5 before eating and after it is 5.9. I thought it was a one off so I experimented and nope - it always goes down very slightly by about 0.4 to 0.9

If I eat two boiled eggs - my bg stays the same. If I eat three boiled eggs it rises a little (I guess because of the protein).

Has anyone experienced this?

Yes I have. I think (and this is just brain droppings) that when you eat something small and for practical purposes no carb that your body gears up and produces insulin. When there is no added glucose from the food, your sugar goes down because the added insulin has to do something. This is what I do in the morning to try to smack my dawn phenomenon down. Sometimes it works, sometimes not so great.
