This is an excerpt from Bruce Fife's book 'Eat fat - Look Thin.
The whole lot makes for interesting reading but I thought that the sections on Free Radicals and Oxidisation of fats - especially heated polyunsaturated vegetable oils was very enlightening as was the section on sugars.
I have had a brief look through and I agree he makes some interesting points. With regards to free radical production and oxidisation of fats some people don’t seem to realise the damage they are doing to healthy polyunsaturated/monounsaturated fats like Olive Oil etc, when they cook with them at high temperatures. I also agree that low fat dieting just doesn’t work as part of a long term eating regime.
Excellent point paulie.
It's a little ironic, given the marketing of foods and supplements claiming to reduce free radicals, that the fat least likely to produce them in the first place is saturated fat!
