Can anyone tell me what kind if effect saturated fat has on your blood sugar reading. I used cocunut milk in a curry last night and although the carbs are low at 4g per 100ml the post effect has lasted a long time. readings at 2 hours after eating 9.4 that was about 8.30pm which I would expect for me I have not got my fasting readings down much past 7s yet but I am trying. Then before bed midnight reading was 8.5 so usually it goes down to a 7or if very good a 6 reading but then this morning 7.30am it was 9.4 again. I do have a history of my reading in the morning often being one point more than my reading on going to bed so thats in a way expected but what made me be an 8.5 last evening is it the saturated fat making the carbs slower in turning to sugar or more sustained sugar release. Do I need to be aware of fat as a problem. I am not very overweight so not really worried about the fattening factor just the readings.
Depends - did you have rice with your curry? I know that for me, ANY type of fat combined with carbs will raise my BG. The fat on it's own has a negligable effect.
This is certainly true for Thai Green Curry (Green Curry Paste w/Cocunut Milk) - one of my absolute favs!!!
