How many hours should I leave between last food intake at night and testing first thing in the morning?

That is entirely up to you when you test and how often.

Thanks for reply but I wasn't clear: what is the minimum of hours in between? From last food at night to testing in the morning.
I am on insulin for type 2. I probably was told but can't remember.

If you are on insulin, then you should get advice from your diabetes nurse or GP.

Thank you but I was told that I shouldn't do intermittent fasting. I just want to know what the minimum window is.

What is the active time of the insulin you are on? Is it a rapid, fast or intermediate insulin?

I am on slow acting insulin.
