It's Nigella's cake recipe but made with stevia rather than sugar http://www.nigella.com/recipes/view/CHO ... -CAKE-5551 with a packet of white chocolate sugar free jello pudding on the top. You poke holes in the cake with a wooden spoon handle and the pudding mix soaks in. It was a bit of an experiment but it worked

ok, this is an eighth of the cake ... I made it as a traybake ... I'd seen recipes for 'poke cakes' on US sites ... so fancied giving it a go ... bought the sugar free jell-o online. grated the smallest amount of 85% dark chocolate on top. Tonight after my tea (chicken salad) and cake my reading was 6.0 so I'm happy
