Finally !!!

Excellent work: I had a similar experience myself- neuropathy and misery followed by revelation and repair on a diet of meat, eggs and green vegetables. Diabetes is a complicated issue, but our friend here has hit on a simple, sustainable approach: I want to support him fully in this- my neuropathy faded almost entirely after a year or so on this type of diet. More power to you, my man!

I wouldn't know where to start on a low carb diet!
Is there any guidance & recipes available.

Here’s an easy starter for you while you do your research.

Breakfast (if you’re a morning person)
If you like eggs, base your breakfast on eggs
Omelette (any sort)
Bacon and egg tomato and mushrooms
Smoked salmon and scrambled eggs
Smoked haddock and poached eggs
In a hurry! hard boiled eggs, (keep half a dozen pre-boiled in the fridge) chunk of cheese, slice of boiled ham
Don’t like eggs? Thick full fat Greek yoghurt with a few berries. Or just eat anything (not typical breakfast foods, left over dinner is good.

Lunch
(only if hungry)
Any meat / fish / eggs / cheese and a portion of mixed green salad and a tomato. You can have full fat mayo or oil and vinegar salad dressing.

Dinner
Any old meat / fish / eggs /cheese and green veggies (cauliflower cabbage etc etc). Cook any way except breaded (fry, roast sautée, stir fry, don’t be afraid of fat, the fat it’s cooked in and any juices make a nice sauce.

Sauces
Whisk double cream into the drippings from the pan, with fish or chicken I like lemon zest and lemon juice also added.
A carton of Seriously Strong cheddar spread, warmed through and whisked with about equal amounts double cream makes a gorgeous cheesy sauce, makes about 4 portions

Drinks,
Water (plenty), black tea of black coffee

Useful / healthy fats, butter, lard, bacon dripping, coconut oil

Have plenty of natural unrefined sea salt, the diet is a natural diuretic and if you don’t replace salt you might get ‘Atkins Flu’

And there you go, a Low Carb Diet in a nutshell!

Thank you so much Mo. This has been a great help to me. I have already started on the LC route and hopefully things will improve.

Hi People. Good Morning from Stanford le Hope. Essex. It's been a while since i last said anything here. I am still enjoying life. i just wanted to say my health has improved dramatically. i don't go on 15K runs but at 67 i enjoy a good walk. i managed to tear my quadriceps tendon about a year ago, (OUCHHHH !) had an operation to repair torn muscle (NOT ! ... a pleasant experience. ) and around 9 months later still a bit dodgy on me legs. but, getting there slowly. I also invested in a Libre freestyle blood glucose monitoring system.. and that has changed my life. (shame, it cannot be dispensed on NHS YET !) for type 2's anyway. i manage to control my blood sugars so easily and quickly now. and i can regulate my insulin dosage so much more efficiently. i have dropped to around 70 units per day...... 35 mils twice daily sometimes less. and just the fact you just need to swipe the back of your arm as often as you like is fantastic. if you can afford it. i suggest trying it. the starter kit is £133 from abbott labs. that's for the reader and 2 sensors. or you can just buy the sensors. and use your phone to monitor, download the app from apple or google play, depending on your mobile phone operating system. Well that's it for now. wishing you all good health. best wishes Gazza
