Has anyone tried freekeh and is it OK? I just read that it has less carbs and more protein than quinoa. I'm thinking of trying it as couscous send my BG through the roof and I'm not too good on Bulgar though I can handle small quantities
I've eaten it as type 1 and it had an absorption profile very like wild rice for me, in that instead of injecting insulin before eating it, I had to inject after the meal, and split the dose as it was slowly absorbed. It certainly wasn't lower in carbs than other equivalents though, so I needed the same amount of insulin.
Oh piglets! I thought I was going to be on a winner there as I've come across some great Middle Eastern recipes that use it. Never mind ... I'll keep the recipes though in case they ever find a cure
