my son hates Christmas pudding so I used to make him a frozen cream pud... mix double cream actually the extra thick one is great for this., add dried fruit to taste, put in a traditional pudding bowl and freeze, turn out and there you go.
Now we are all doing the LCHF diet on here I thought mmmmm this could work for us, replace dried fruit with fresh berries, crushed nuts,almond flakes or even perhaps almond or peanut butter and make in ice cube trays, I am going to experiment with this idea, who's up for it?
If you don't mind alcohol adding a spirit based alcohol such as vodka, gin etc will soften the freeze as this type of alcohol doesn't freeze.I have experimented with something like this but it went rock hard - I'd be very interested to find out how to make it a bit softer.
