my son hates Christmas pudding so I used to make him a frozen cream pud... mix double cream actually the extra thick one is great for this., add dried fruit to taste, put in a traditional pudding bowl and freeze, turn out and there you go.
Now we are all doing the LCHF diet on here I thought mmmmm this could work for us, replace dried fruit with fresh berries, crushed nuts,almond flakes or even perhaps almond or peanut butter and make in ice cube trays, I am going to experiment with this idea, who's up for it?

I just freeze the cream without anything in it about 90ml.. about 40 minutes gives a gooey centre with frozen outside.. it would benefit from a bit of sugar free flavouring.. but its ok as a cold dessert.
 
It sounds great!

The cream turns rock hard and solid, so you would definitely need the icecream trays. Wonder if making it in an icecream maker would incorporate air, and make it softer...?

Or better yet, whip the cream before stirring in the nuts. Would be more like a frozen desert texture then...

Really love the idea of the nut butters.
 
I have experimented with something like this but it went rock hard - I'd be very interested to find out how to make it a bit softer.

If you don't mind alcohol adding a spirit based alcohol such as vodka, gin etc will soften the freeze as this type of alcohol doesn't freeze.

There is a commercial freezing plate that I have seen that you just pour cream on then add any ingredients you like and push it around the plate until frozen - but you have to eat it right away - haven't seen a domestic one yet - but if there isn't one I bet there soon will be as we are due a new craze! Lol

Thanks for the great ideas. It's my anniversary next week and we are going out for dinner but it will be nice to make a special non-chocolate dessert for when we get home.
