Gluten free flour

I'm a type 1 diabetic on a pump and my so who still lives with us is waiting for an endoscopy to see if he has coeliac disease. I've decided the easiest thing to do if the diagnosis is confirmed is only to use gluten free ingredients for cooking. However is the carb value for gluten free flour very different? I know the carb value for most of the things I cook and the thought of having to relearn them is a bit daunting.

Hi Janrou,

I have just made a lemon drizzle cake for my friend who has coeliacs, the flour has 78.2g of carbs per 100g and regular self raising flour has 75.1g of carbs per 100g. So they are very similar. Hope this helps. Good luck.

If you do decide to bake with the gluten free flour, it makes the cake ( Which I made) a slightly different texture, it was flat as opposed to risen in the middle. still delicious though
 
Could you share the recipe, although son is 28 he still lives at home so we are all trying to get our heads round this. His endoscopy has been booked for 17th April although we are trying to get this brought forward as he has to continue eating gluten until diagnosis is confirmed.
