Gluten Powder Vs Xanthan

I'm ordering some gluten powder to make some flatbreads, can I use the gluten powder as a thickener in stocks and casseroles or should i buy some Xanthan or other thickener for that purpose.

Never tried gluten as a thickener but I use xanthan gum. Some people recommend other similar gums whose names I don't currently remember as the local shop doesn't sell them. Guar gum is another.

You can also use psyllium husk but that may move some people's bowels rather quickly
