Can someone point me to a link where I can see typical glycemic response curves? Particularly the peak/maximum values.

You'll notice that they are biphasic (one peak at 1-2 h and another at 4-5 h) and this is normal as insulin is secreted in two phases (stored insulin first and then newly made insulin, which takes a while - https://www.veri.co/learn/biphasic-curve-metabolic-health).

It also depends what type of carbs you're looking as those with a high glycemic index (GI) means faster glucose uptake into blood - compare popcorn (high GI) with peanuts (low GI) - see Table in https://beyondtype1.org/glycemic-index-diet-diabetes/. Hence, lower GI carbs can stretch out the peaks in the response curve..
