Hi - if you email me what u ate there - i am not to keen on thai food - I will look up carb content for you. I went to thailand before I had kids and cannot remember much about food other than noodles!
Pack plenty of dextrosol just in case and take some packed snacks - maybe even things you do not normally eat in your case and hand luggage - mayve some dried fruit, rice cakes , wholegrain crackers, cereal bars . They may just be stand bys. Ask the airline about food too - I have found in the past that some have been helpful with pateints on various types of diets.
Ask your doctor for a covering letter re insulin and snacks and take extra. A dietitian I know who is a Type 1 tells everyone to split the insulin etc up - she was mugged in barcelona and had her insuln in her bag - luckily she had some in her hotel room.
Don.t drink too much alcohol when flying - may cause havoc with bS and also make you dehydrated.
hope that helps.
