Hello everyone. I'm looking to make a nut bar for snaking. I've heard goji berries are better for blood sugars and would like to include them in a nut bar. I was thinking of using as a binder like one would use dates. I need some help with a recipe and how to get the berries soft and sticky. I have a bag of mixed seeds and a bag of peanuts and another of almonds. Also about a cup of goji berries.
Thanks for the ideas. I may also dip them in some unsweetened bakers chocolate or add cocoa nibs to the mix.
Maybe blitz the goji berries in a food processor till they are a pasta. You might need to add some not butter to get some decent consistent when you add the seeds and nuts.
Or use a nut butter and add the goji 's nuts and seeds all together to make bombs
Found this on t'internet: "Dried goji berries can easily be rehydrated. Simply pour boiling water over them and let them sit until they are plump and juicy - use as you would any fresh berry."
Thanks for that. I knew you could rehydrate them but was unsure what to do from there. I am not a baker and have trouble with needing to be so exact with measurements. I prefer meats and veg where i can just do what i want and it usually works.
