Granola/Nut bars

Hello everyone. I found some some protein bars but they still have almost 20g of carbs most of them sugar. I was thinking of making something my self that might be a bit lower. I've got a mix of nuts and seeds which are quite low in carbs. I need something to bind them together. I was thinking of using honey or making some sort of cake from almond and coconut flour and Truvia.

If any one has a better idea or can point me to a recipe that would help a lot.

Thanks.
Stephen

The GI of honey is why i want to avoid it. My google search didnt turn up as much as i thought it would. But this recipe you sent looks pretty good.

Thanks for the suggestion.

I'm late to this thread, but have you considered using chia seeds (whole or ground) as a binding agent? Or eggs? For example:

Another thing I've seen is mixing in melted coconut oil (1/4 to 1/2 cup) with a bunch of stuff (chopped and/or ground nuts, protein powder, some vanilla extract, some sweetener if you like). Press the whole thing into a pan, refrigerate, and the coconut oil re-solidifies and holds things together.

If you're into the idea of low carb "granola" cereal you could try this: http://alldayidreamaboutfood.com/2016/03/low-carb-chocolate-orange-spiced-granola.html

Or this: http://alldayidreamaboutfood.com/2015/05/low-carb-banana-nut-hemp-seed-cereal.html (really loved this ... used vanilla extract instead of banana and it was excellent)
