A couple of questions so we can best advise...

What sort of food do you normally eat?
What insulin do you take, is it just your night time one?

I would normally have like rice, chicken spinach, egg a mix not really consistent
I take lantus and yes only once at night

I think you need to go back to your health care provider for a review of your insulin. You're T1, and they usually need meal time insulin as well after a while.

Agreed completely with the previous comment must go back to Dr. one dose is not enough This is if you are on the type 1 of diabetes
Have you analyzed C-peptide You can ask your doctor about C-peptide test

I’d highly recommend going back to your doctor to review your insulin. Lantus doesn’t cover a full 24 hour period in many people, and you may be at a stage now where you need a fast acting insulin to cover your meals, especially if they include rice. Can I ask where on the world you are?
