Help! Insane BS travelling in south India

Any advice - am having to inject so much act-rapid thro the night to get bs down. Avoiding rice, but also can’t eat salads here due to water risk. Food delicious but am paying a hefty price - guessing all the oil is slowing down the absorption massively. Also running a slight sore throat and cold post flight. Nightmare as I normally low carb.
