Do you pre-bolus? If so, how long do you inject before you eat?
My guess would be that you are taking the right amount of insulin but taking it a little too late.
In an ideal world the peak of the insulin will match the peak of the carbs and balance each other out.
This is difficult to achieve in reality without a healthy pancreas.
The usual advice is to bolus 15 minutes before eating. But this varies depending on what you are eating. For example, food which is high in fat (such as pizza) will reach its peak later whereas something pure sugar (which is what we usual use as hypo treatment) will peak quicker.
It takes some trial and error to work out some guidelines that work for you: unfortunately part of the "we are all different" is the speed at which insulin reaches its peak and the speed at which our bodies digest food.
It is easier to do this with something like Libre which allows you to see the peaks without turning your fingers in to teabags with 15 minute finger prick tests.
