I totally get the night-time muchies thing - I open the fridge most nights and stare longingly at my husband's choccie stash!
I was a bit worried by you saying that you snack on cereals etc as thes are mostly carbohydrates. These require large doses of Novorapid, and you will get big spikes in your levels. Also, if you're not injecting for them then you'll really see the highs!
Everyone's carb-insulin ratio is different. Mine is 2units on Novorapid per 10g carbs. We worked this out by keeping a food diary and recording carbs eaten against injections then fine-tuned the results.
Another prob having carbs so close to bed is where are they going? You're heading to bed where they will sit, not running a marathon burning them off - your body will struggle metabolising them.
I had the same problems (a small bowl of Special K will send me from 5mmol to over 20 mmol in about an hour!!!) and had to wean myself off cereals! I sometime snack on low-fat Babybels, but find a handful of nuts really helps. You could also try some cold meat (ham?), hard-boiled eggs, celery/cucumber with peanut butter, or even a hot drink can help!
I started dropping my carbs after reading about everyone elses experiences and have seen a phenomenal difference! I used to inject about 45-50 units of Novorapid a day and still ran sugars of about 12mmol. Today I've had 20 units, ran at about 5mmol and even had a hypo (so this was too much!!!) It's a real juggling game this diabetes!!!
