Pizza is a very complex carbohydrate. When i take insulin for Pizza i have to extend my bolus for 2/3 hours to control the extended spike it gives my BG!!
It's possible that the pizza took a while to break down and get into your system so it's likely your body had less than 8 hours to lower your BG by itself. Maybe it managed to get it down a little so your pain subsided but the sandwich you had spiked it back up..
It's hard to say because everyone is different in how they process carbohydrates. Depending on how fast you digest, your metabolic rate, the amount on insulin your body can still produce, how effective any medications are, how effect your cells are at absorbing Glucose... the list is endless really.
Do you test your BG regularly? if you test regularly you will know how much carbohydrates your body can tolerate without rising your BG's.
High BG's can affect your mood, feeling low, angry etc can be a sign of high BG's.
