Home made chips

Hello. I have been keeping my BS pretty good for a few weeks now. Today I thought I would have some chips, took BS two hours later and it was 11.3 I just couldn't believe it. As I'm prediabetic do you think now I could be T2? because my BS has been in the 5s to 7s.

I'm really worried now as its so bad for me to be a full blown diabetic as I am a kidney transplant patient. I'm not over weight if any
thing I am loosing weight.

I know now I can never eat chips again, what with all the foods I can't eat again life has lost one of it pleasures FOOD!
 
Chips seem to cause my blood sugars to rise quite a but too. It's a real shame as I love home made chips! You could try making them with other veg. Sweet potatoes are lower in carbs so a bit better for your sugars. Still cause my sugars to rise, but not as much. Alternatively, try kale. Surprisingly nice!
 
I think the only person who can tell you your diabetic status is your doctor and as a type 2 fairly new to the game, I am not qualified enough to give an opinion. What I would say is that my favourite pastime and hobby is cooking and like you, I felt that one of the things I most enjoyed had been taken away. For a while I lost my inclination to cook. Then I thought 'bother it' (or words to that effect!!) let's invent recipes with the ingredients I can eat, which is what I have done. Tonight we had broccoli, cauliflower and leek in a cheese sauce at under 10 carbs ( hubby had pasta in his) the cheesey topping had cayenne pepper in it and was yummy.

So try turning the whole thing into a challenge, it's very hard and can be demoralising but everyone here is in the same boat and they have a wealth of information to help.

My wife makes me 'chips' out of swede. Cut chunky chip shaped pieces and par boil for 8 minutes, then put them in to a pre-heated frying pan in the oven for about 25 mins

I love swede, had some on Sunday, yummy, but as a chip, sounds very interesting, why not :?: Thanks RRB
