Whatever I eat it's the same, e.g. before food 7.8 after tuna salad 20.1
It seems to me that the process of just digesting any food sends my BG up.
Am I being impatient or what

What are your bloods actually scoring, and exactly what is on the plate for your tuna salad? That's not mean to be insulting, but I made some real bloopers in my early days. (Hopefully, it's something simple......)
Is your tuna salad from a ready made pack? Have a look at the carbohydrate content - some are quite high. A spike like you've seen sounds as though there's high carb content somewhere.
Tuna salad was only an example but for the record it was tinned tuna and salad was lettuce cucumber celery spring onions and tom.
Following strict LCHF with no carbs, no sugar.
This happens every meal whatever. This morning, egg bacon mushrooms. Before 8.1 after 19.2
I have trouble seeing it as a liver dump.
I'd go back to the DR, I see no food explanation for that. I would take a reading every hour till they come back down and take the result with me. so he has a good idea of what's your bloods doing. there are other tests he can order, to chase the symptoms. c-pep and gad
it's possible that it may be a lack of insulin
if I'd have gut pains, feel sick or start throwing up, I'd need to get to A&E
