It sounds to me as if you need to ask your GP to refer you to a specialist. You certainly need to ask him/her why you've been put on metformin - that seems slightly counterintuitive to me, as metformin makes your body MORE sensitive to insulin, and it sounds as if you're plenty sensitive enough.
However I may be missing something, I'm not experienced in hyperinsulinaemia or PCOS. I am experienced in being fobbed off by doctors, though, and so I'd definitely say it's worth going back, with a notebook, (and bring a friend if you can), and asking exactly why you've been put on the medications you've been put on, what their explanation of the biology is in plain english, and what specialist help is available to you to understand how to avoid these low sugars.
