Ah yes @elleseum - the cost! You are not wrong - low-carb, alternatively sweetened, or Keto/Low Carb food products bought at the supermarket cost a big bomb - for sure.

My poor country - Aotearoa/NZ is having a cost of living crisis big time, and we have two big corporation cartelles controlling our food with high prices, especially for a country specialising in food production, holding us over a very expensive barrel. I now have to explain to my friends and family that I have a 'no contest' fight with my budget - eating quality food has to come first, else , well, my heart and my kidneys could break down etc etc and it would be game over. (I don't talk about amputation and blindness risks to just anyone!) I'm lucky that I have loved ones that let me take horrified pictures, send them, of produce in the supermarket and discuss the shocking prices with me, and they know I prioritise quality food (as in less processed, or best fresh, low carb, healthy fats, good high protein etc etc). Many countries are going through very tough times, and food and feeding ourselves and loved ones is a very big very tough topic.

What a rough time you are going through in my thoughts.

We all slip up at times and for me the best thing is realising I have support in my family (and now on here since I found it), get up and start again.

If you had to answer your post someone else had listed, I guarantee you would be kind and gentle to them. I think you need to also be kind and gentle to you, whilst starting again and keeping to the guidelines.

Btw I too am my worst critic

This is great as a savoury thing too, leave out the sweetener and add some seasoning or even dried herbs or Parmesan cheese, once it’s cool makes a cut in half and use like a bread bun.

I’ve also added it to stews and casseroles in the winter as a sort of dumpling
