I’m sure you have all found a way to eat pizza without having to give yourself rapid acting insulin! No? I have always preferred thin crust anyway so if I’m out a restaurant I’ll eat most of the inside of the pizza but all the topping and I’d probably get a little rise, maybe a 10-12 but not out of range. Then I discovered frozen pizza dough. I roll the hell out of it to make it thinnnnn, Jarlsberg cheese, Mozzarella, roasted San marzano tomatoes, tomato base and pepperoni/salami/prosciutto plus some basil leaves after cooking at 240 for 10 minutes and my BG went up to a whacking… 6.5mmol and… it was delicious!
