levels rising but not eating any carbs

I weighed myself this morning and I have gained weight and up to 10st 7 so havnt lost anything - I think its due to the fact iv been having more insulin again :-( I feel like I could cry

You are certainly within the healthy weight range for your height 8st 6lb to 11st 6lb.
 

I can completely relate to you! I have this going on as well...coffee (even without sugar) will definitely raise blood sugar levels BECAUSE IT RAISES BLOOD PRESSURE. Many doctors I have seen disagree that stress & anxiety does not affect blood sugar levels with type 1 but it DOES. High stress does a lot to your body by affecting hormones, changing your insulin sensitivity. I personally handle this problem by manipulating my insulin ratios if I am not active or I go to the gym, or both since I have a lot of anxiety about my diabetes.
 

If your A1C was that high, it's not the amount of insulin you take that's making you gain weight, but the fact that your blood sugars are getting back in range. Because you were so high before, your body was burning fat to get its energy due to the lack of insulin. Now it's stopped doing that and gone back to using the carbs/glucose.
