Evening all,

Last February 14th, it was Coquilles Saint Jacques, a warm baguette, rump of lamb with dauphinoise potatoes and asparagus, Valencay goats cheese and a chocolate torte with mango coulis. Fizz and red wine followed by more chocs...little did I know I was harbouring T2 diabetes!

This year it's my turn to deliver the evening so here's what I am thinking:

- plateau of smoked salmon with soda bread for her, not for me...

- côte de boeuf with asparagus, Mediterranean vegetables

- a teeny bit of brie, oatcakes for her

Then the problem. What can I deliver for dessert other than berries and yoghurt?!!

Thoughts much appreciated.

(It's also our silver wedding anniversary on the day too, so I have to make an effort, otherwise it'll be curtains)!!!!
 
Fastest pud I know is keto chocolate mug cake. Split between 2 ramikans. Nuke for 90 seconds. Serve with double cream.

Firstly, congrats on your impending silver aniversary.

I have to be honest, I don't do desert?
Steak, mushroom & some celeriac chips can be the food of love here.

I've planned ahead for my non D wife if she fancies a sweet treat.

Celeriac dauphinoise to replace the potato one. Its lush
Cheesy lc soda bread from keto fitness club recipe for you. Freeze remaining portions.
That site also has 4 brownie recipes and several versions of chocolate cake including a chilli one.

If she's not happy with that lot, you can come cook for me!

Chocolate mousse. Melt 100g dark choc (85-90%) with a tablespoon of butter, (add extra sweetener to taste, I don't any more but non-keto people would appreciate it; this is also the time to add any flourishes such as crushed walnuts, or chilli flakes, or candied ginger, etc.). Cool down slightly and mix in 2 egg yolks. Whip the egg whites very stiff, then gently stir into the choc mixture, divide into 2 glasses/jars/bowls and chill in the fridge for at least 2 hours. For added romance points, sprinkle with rose petals on top/around the serving.
