Melt 100g dark choc (85-90%) with a tablespoon of butter, (add extra sweetener to taste, I don't any more but non-keto people would appreciate it; this is also the time to add any flourishes such as crushed walnuts, or chilli flakes, or candied ginger, etc.). Cool down slightly and mix in 2 egg yolks. Whip the egg whites very stiff, then gently stir into the choc mixture, divide into 2 glasses/jars/bowls and chill in the fridge for at least 2 hours. For added romance points, sprinkle with rose petals on top/around the serving.
