Low carb breakfast ideas

Hi all - trying to stick rigidly to low-carb after a spike in my HbA1c. I do struggle with breakfast as I used to enjoy cereals and toast, which obviously are not low-carb or appropriate. I sometimes have pecan nuts and full fat yoghurt but get bored with that. What do people recommend for breakfast that is quick and easy but low-carb?
 
Eggs, either scrambled or as omelette, or soft boiled or fried. Or hard boil lots then you have ready to grab breakfasts for several days
Add cheese or ham or herbs for variety.

I usually have a low carb porridge made with milled flaxseed.
2 heaped spoons of flaxseed to a flat spoon of chia seeds, add a few other seeds and chopped nuts plus cinnamon and a pinch of salt. Put in a deep microwaveable bowl and cook for 2mins. Add a spoon of coconut milk, sweetener if you need it, and serve with double cream.

I make up a week's supply at a time.
When I first started making it I added a flat spoon of oatbran then reduced it until I got used to the flavour.
 
As MrsA2 suggests, you can eat anything you like from a low carb perspective even beef burgers or low carb curry if you want! Lol! I usually don’t want breakfast and just have a large mug of coffee with cream in it. For lunch I have sardines, grated cheese, hard boiled eggs with lettuce. Cheese and ham omelette. Full fat yogurt with a few berries? And these can all be eaten for breakfast.
 
I love their granola, my favourite is the cinnamon one. Blitzed in a food processor and with melted butter added it makes a great crumble topping, or a base for a low carb cheesecake.
 
I have flaxseed muffins, batch making them on Sunday:

200g milled flaxseed
4tbsp baking powder
8tbsp splenda
4tbsp cinnamon
4 eggs
50ml almond milk (not sure on the exact amount, I just make it wet enough for it to be the right consistency; not too loose)

Bake for 30 mins

2g carbs per muffin
 
Might sound glib, but why not fasting? Nothing is lower in carb than not eating.
