I have a precious, little bag with some real Mexican mole and I want to use it somehow. I loved enchiladas, so is there a low-carb alternative to smother in the mole sauce, wrap around chicken and bake with cheese?
Today I baked simple chicken pieces in the mole, which I had stirred into home made chicken stock. I put cheese on top (150 g reduced to 20 p last night in Tesco) and baked it. Oh, it was so good!
