Certainly proves the age old adage - we are all different!
One possibility I guess is that your bs on day 2 was already more elevated, so the effect of any dietary carbohydrate would be more pronounced. I'd need a correction dose over and above the insulin I'd normally use if I started out at 6.6mmol/l first thing in the morning. As a T2, you don't have that 'luxury' so the outcome might be your higher than expected bs.
As you know, there are so many other variables involved sometimes, any of them might be involved.
Quite a lot of carbs there though, have you tested at 1 hour to see what your 'spike' is?
