Carbs and Cals. (from Amazon) is an excellent book. It shows you plates of food with details of portion size, carbs, calories, protein, fat and fibre. Easy to follow. Have a look on Amazon.

I have only bought one book so far (Low carb vegetarian by Celia Brooks). It is ok, but I have found google and this place much more useful.

Brekkie: fry up (mushrooms, tomatoes, eggs, handful of spinach or full fat Greek yoghurt (plain) with berries
Lunch: think tapas, antipasti
Snack: handful of nuts

Bean bake
Ingredients:
2 chopped onions
Garlic butter
1 tin of mixed beans in tomato sauce
1 tin of chopped tomatoes
Tomato purée 3tblsp
Red wine - good slug.
150ml soured cream
Loads of grated cheddar
Mixed herbs
Seasoning
Chilli sauce
Method:
Fry onions in garlic butter. Add all the ingredients apart from the soured cream and cheese. Simmer for 10 mins. Pour into oven proof dish. Put soured cream in middle. Sprinkle with cheese. Bake in oven on 180 centigrade for 40 mins.

I reckon you could swap the sausages for quorn ones?
Sausage and lentil casserole
12 sausages
2 packs of Puy lentils
3 peppers
3 handfuls of carrot batons
Garlic butter
400ml stock
Gravy granules
Seasoning
Set oven to 200 degrees c.
Fry sausages in oven proof pan until they get some colour. (You will need a lid.)
Chop and add veg.
Add garlic butter.
Fry for couple of mins.
Add everything except the gravy granules.
Pop in oven for 30 mins.
Add some gravy granules to thicken sauce.
Eat and enjoy!
