I eventually decided to start baking. However, I don't have time to buy ingredients and do fussy stuff. Is there a ready to use mix that I will add minimum stuff and make decent muffins/cakes? Ideally it wont require me to add chocolate/blueberries myself. Any recommendation??

Our super cake cook @Brunneria might be able to help.

Hi

You could try Googling 'low carb cake mix'.
I'm afraid that all the lc cake recipes I have need to be mixed and fruit added manually.

so no time to rub butter into almond flour to make almond biscuits? You would need to add a sugar substitute.
Must it be baking? The quickest dessert not fruit and cream I do is melt chocolate in a tiny pan over a tealight, stir in a little cream, dip in fruit (strawberry) and dip chocolate into almond or coconut. I actually like amaretto in mine.

Sukrin make one which i got as a free gift from Ocado. Sadly it was quite unpleasant
I regularly make Low carb cakes and they are Incredibly simple make - a maximum of 5 minures prep time,6 ingredients, a stick blener, a cake / mutfin mould(s) and an oven are all thats needed

The best way to bake decent cakes and muffins is to make them with decent ingredients like fresh eggs and butter. An important part of a healthy low carb diet for many of us is avoiding processed food wherever possible, so IMO it's well worth doing things properly. Google "muffin in a mug" or "one minute muffins" - it just takes seconds to add a little fruit or cocoa powder to a basic recipe! But if that's too much effort for you, maybe try Ugg muffin mixes from places like Holland and Barrett. I've not ever bothered buying these as I much prefer to bake my own with fresh ingredients, but I have used their plain bread mix.

Indeed!
Or just a few minutes in a microwave. And you don't really need a stick blender - an old fashioned fork will do too... All done and ready to eat in around 10 mins.

I never use microwaves - dont trust the nutritional quality of any food thats been zapped with radiowaves of whatever frequency
I use 200g ground almonds, 6 eggs, 2 tsp baking powder, 2 tsp vanilla essence, 100g erythritol, 2 tbsp thick cream or yogurt to make a batter ( using stick blender)
Add whatever you fancy in the cake
( my favourites are
100g blueberiies
125g raspberries
3-4 tbsp organic cocoa powder
1-2 small shots of stong expresso coffee with 75g pecan nuts but the only limit is your imagination / tastebuds)
pour into silcone cake / muffin moulds,, bake at 125 degrees for 40 -50 mins ( time needed varies for different fillings depending how much liquid they add. Muffins need less time - around half an hour as i remember ( only make thevcakes nowadays 8- 10 slices 2g carbs a pop)
