Low carb pancakes for Shrove Tuesday

I was a huge fan of regular pancakes pre/diagnosis, so my diabetes journey has involved a steady evolution from 'government approved diabetic friendly' pancakes to moderate carb pancakes deliciously sweetened with banana, to low-carb pancakes today. I probably needed the wrench to be less immediate!

My go-to recipe needs to be few ingredients and easy, hence the name '*Easy Almond Flour Pancakes' by Wellness Mama.

1.5 cups of almond flour (as fine as possible)
3 eggs
1 cup of water or milk of choice (I use coconut milk, or cream)

Optional - spices like cinnamon and vanilla, blueberries, berries etc.

Mix well, cook in a very hot pan till bubbles appear, flip, eat, enjoy.
Eat with lashings of whipped cream if you are a LCHFer. Stevia sweetened preserves are great imho.

Easy peasy.

Rarely, I experiment with other recipes, but this one is my go-to as it is sooooo easy, and gives good results.

But, the caveat. This is what I say about all low-carb substitutes to carby comfort food standbys, like pancakes. Don't expect your high-carb tolerant, or, just non-low-carbing friends and family to enjoy these! Yes for the moderate carb substitutes I started out on 9 years ago. You either need to cook a batch of regular pancakes to go on a plate all of their own for those lucky folks. And resist eating those ones! Is my tip at least.
