Low carb pastry recipe anyone?

Does anyone have a good tried and tested recipe for low carb pastry? not the fathead dough, I’m not keen.

I’ve tried a couple of recipes and even bought some ready made online but they all turn out a bit “bready” they don’t really have that bite you get with proper pastry, it’s obviously because of the lack of flour and is probably one of those foods that there is no real substitute for but thought I’d ask here before I resign it to the file marked not doable
 
Pastry made with ground almonds and a little butter is fine, although it softens over time so won't stay crisp. I can't manage to roll it out but spread it with a fork then press it down with my fingers.

Thank you, don’t think it will fit my bill though but I really appreciate your reply, that’s how I make cookies with sweetener
 
Hi @lovinglife. Do you mean pastry as in alternatives to pastry treats as in dessert type pastries? Or do you mean a pie crust pastry?
It’s for a chicken pot pie, I’m wanting to prove a point lol so I need a recipe that is the nearest to proper shortcrust pastry, everything I’ve tried isn’t cutting it - I think I’m going to have to admit defeat on this one, can’t get the “shortness” aspect right.

I hate losing! lol
 
Hi again @lovinglife. I spent some time trying to find the website where I found my 'go to' pie pastry recipe from, to no avail, so this is coming unlinked and uncited - horrors! So forgive me whoever put this recipe out there on the web... But this is my fave and I use it often

Almond Flour Pie Crust

Preheat oven to 175 C, or 350 F

Ingredients:
2 cups (225grams) of almond flour
1/4 tsp baking soda
2 TBSPs (30g) coconut oil, or butter for rubbing in to flour

Method:
Mix with spoon, and rub in butter, or, mix in a food processor, pulsing a few times.

Press into pie dish or wee dishes
Bake for 8-12 minutes,

Add filling, cover with pastry, bake further, until lightly brown around edges

Easy peasy! I love it. For berry pies I add vanilla. So easy and yummy I have been known to bake berry pies late in the evening, and scatter shredded coconut on the top and serve with whipped cream to fill a whole for pie deliciousness that won't spike you, but watch the berry amount if its a low carb fruit pie. Berries must be fresh or defrosted mind.
