Just stew the meat you have for a few hours on low in a stock cube then, to thicken the 'gravy/sauce mix some cornflower with a little water to make a paste and add to the meat. It won't be that bad on carbs, you only need about a tablespoon to over a pint of stock. (Don't add it all at once or it could be too thick) If it isn't thick enough then just add more of the cornflower mix. You may need to put slow cooker temp up to high so that it cooks out the cornflower . It is easy really.

I was thinking of getting a slow cooker. I'm not at all good at cooking or thinking up recipes as they always turn out tasting foul. Before I was diagnosed I lived mainly off ready meals. Now I'm cooking proper meals but have a limited amount of things I know how to cook. I don't mind stmainl
I can think of adding meat and herbs and spices to things but then how do you make it into a sauce you know like chicken stew or chilli. I just don't know how to do it. I think a slow cooker would be good for me because you just bung it all in and leave it do it's thing.
Has anybody got any low carb easy slow cooker recipes? I like to keep my calories quite low as well as I've got weight to lose.

You could always blend some of the veggies and add them to thicken the stew if you don't want to use cornflour or gravy. Alternatively, you could blend some beans and thicken that way ... I know they have carbs but they also have lots of fibre and are generally recommended for diabetics. Oh, I just saw you are very low carb so you would definitely not want the beans .. someone else might thoughIs there a lower carb alternative to cornflower? I would be happy using a teaspoon or so in a whole slow cooker load. Every time I use it however I do wonder if there is another lower carb way of thickening things. Is Xanthum Gum something worth trying (I may well have misspelled that)
