Skip the chicken and go for beef and mutton instead. Chicken is extremely high in protein and has almost no fat at all. Belly pork is often nice and fat, the other day I found a piece of belly pork that was almost pure fat, lovely.
Then there are oils and other fats. Finely grated parmesan in the salad will help the oil stick better so you can use more. Or mix in some creme fraiche, also helps the oil or dressing stick instead of pooling in the bottom of the bowl.
Add a generous amount of coconut or olive oil to soups and stews.
