Mixed results???

Hi, i have type 2 - had it on and off for about 6 yrs.
I recently got a Libre monitor. I wanted to see what exactly spiked me.....
But after a week I am still no wiser...
I can eat a meat and veg meal - and go up to 9
Beans on toast - sent me up to 10
egg sandwich up to 11
But when i had crumpets and a cup of herb tea - i s did not spike.
I have had salad, humus and felafels with pickles and did not spike.
Wine and crisps - no spike.
oats and seeds - huge spike
I have had pineapple and yoghurt and not spiked - but when i had bacon i did....
Most meals are very heavy on veg - with good quality meat/fish/beans. But i still go up after1-2 hrs - usually 2-4 digits.....
It does not seem to be the carbs that spike - apart from when i ate a biscuit - that spiked!! But why wouldn't a crumpet?
thru the night i am 6-8 quite level - but usually around 8 when i wake up....
this morning (i am ill with a bug at the mo) i just had a cold potato and carrot - no spike at all.....
its a bit confusing..... other people i know have had definite spikes every time they ate carbs - which flattened if they had avocado/cheese etc first.... but mine is not clear....
 
I just wonder how much butter you put on the crumpets. Butter would help.
 
Hi there @hecate105 . I would agree with @IanBish the fats will slow your metabolism down, so you will be raised for longer , but lower. No fats, higher but shorter. I go through something similar to you. My blood sugars are very unstable and what raises my blood sugar one day barely moves them the next. I have no answers unfortunately. I call my pancreas a brat, it behaves until it doesn’t. My AM fasting blood sugars can be high or low, regardless of what I eat the previous day. Do you ever hypo?
