MODY and weight loss

My wife was diagnosed as type 1 over 20 years ago at age 12 (she's mid 30's now).

It's only recently that she has been tested and confirmed as MODY. Still insulin dependent - Humalog with meals and Humulin I at night.

6 monthly HBA1C's are coming back in the 8.5 range, but home testing is normally much lower than this. There's the occasional blip, usually following a hypo, but otherwise her home testing results would show it's well controlled.

She has been overweight since we started a family almost 12 years ago. We've started eating clean - i.e. more natural foods and limiting processed as much as we can. Also trying to eat more fats and protein and cutting back on carbs, especially sugary foods. Very little bread/pasta is eaten - maybe once or twice a week. We noticed a good reaction in the first couple of months of this, but since then it's plateau'd and she is still about 3-4 stone above the weight she thinks would be healthy for her

That's the background, here's the question. Has anybody had experience of this, either themselves or a family member?

Possible things I'm thinking of is:

being much stricter on insulin control around meal times and spending more time calculating exactly how much insulin to use. Currently she uses a gut feel for how much to inject, based on what the meal was.

introduce resistance training. A kettle bell program is being followed at the moment - 25 minutes, 3 times a week, and I think resistance training either as well as or instead of this is worth a try.

Any help, advice or pointers to material on the web would be much appreciated.
