My new favourite dessert

Admittedly I do like to have a prober dinner - and 2 courses, too!! Finding desserts agreeable with a carb managed diet has not been so easy, but I have come up with something which is really lovely and you can easily use for non-diabetic too - they wouldn't know any better!!

I take 2 quarter pears (tinned in own juice, NOT syrup), add a good spoonful of Greek yogurt and 1-2 spoonfuls of double cream. Add a few fresh raspberries (or any berries you like) and sprinkle with almond flakes.

Well arranged it looks great and it taste even better!!

PS. I do make sure that portion control is in place, if you have guests you can make their portion larger if you like, but I like to ensure that my portion is max 100g in total and usually somewhat less.
 
Here's another one I guarantee you will enjoy.
2 tablespoons of fromage frais per person in individual dishes
Pour a tablespoon or so of sugar-free maple syrup (also known as imitation maple syrup) over each dish.
Serve
 
Fromage frais, double cream whipped, berries and grated 85% chocoate( and toasted flaked almonds)
 
tub of mascapone cheese (which serves 2-3 depending on your portion size). Mascapone is slightly sweet but low in carbs, once you have this basic ingredient the world is the mollusc of your choice...

mix in 1-2 teaspoons (dissolved in a little water) good quality instant coffee and a little sweetener. chill before serving

mix in a couple of squares of melted high quality 70% plus chocolate

both the above can also benefit from a couple of drops of vanilla or other essence

the zest of a lemon and line, some lemon essence and 1/2 a squeezed lemon or lime, sweetener to taste

pulp some berries and mix, sweetener to taste

Deliciously rich and indulgent and very sophisticated It hits that cheesecake spot and is very flexible.

Next time I buy mascapone I plan to experiement with some fresh ginger and chocolate, this has always been one of my favorite combinations.
