Need sponge cake recipe!

I'll trawl through as well but I was wondering if anyone had a good cake recipe that would work for cupcakes too - ideally low carb/low GL.

I don't think I made them sweet enough. I'll see if the kids eat them...

Got a batch of lemon almond cakes now riding in the kitchen...fingers crossed or I may cry!

I'm determined to find the miracle cupcake recipe so us special people can have proper tasting cupcakes without fear.

It's a challenge so far but it's only day 1 and I am quite talented in the baking department even if I do say so myself

i dont think making cakes with almond or coconut flavour will ever be the same ("as good") as regular flour cakes, but as your tastes change hopefully like me you will enjoy them
 
its just trial and error you will find some things you love, if not i will probly love them, dhl
 
So I just had a taste of the almond cupcakes. Denser than I'd like but a good start so now I can experiment with a few tweaks here and there. Icing was a tad bitter so more sweetener required there but not bad.
