Before going lchf I would have said the same. Hated it. Hated the smell of it even. I also have no gallbladder and was convinced that meant no fat too. However now is a different story. I very gradually added in the fat to allow both my mind and body to adjust slowly. I used to hate cream. Love it now. Always trimmed all the fat off bacon. Don’t do that either now. Even managed to eat some belly pork but do still need to trim it a bit. Mince was always the leanest. Now I use 20% but do pour any large excess off before continuing. There’s a variety of fats sources. Cheese, nuts, the right oils, butter not just meat fats.
