Normal 2-hour post meal readings for non-diabetic?

I'm not diabetic but my hypochondriac self scared me into thinking I might've had type 2 earlier this month. I scheduled a doctor's appointment to get an FBG and a1c test done. They both came back normal (77 and 5.3% respectively). In the interim before the doctor's appointment, I even used a self-testing kit to monitor my blood sugar for a few days.

However, I am curious about some of my postprandial readings. The first time, I fasted for 18 hours before testing (took a while to pick up the kit from the pharmacy) so my fasting was 86. I had two egg tarts(Chinese delicacy: egg and sugar mixture in the middle of a cupcake-sized pie crust) for a quick meal in the afternoon. 2 hours later my blood sugar was 118.

For the next two days, I just monitored my blood sugar after dinner.
Day 1: Big bowl of Japanese fried rice with seafood, around 108-110 after 2.5 hours

Day 2: Big bowl of rice with scrambled egg and beef, a pack of Mentos right after, 102 after 2.5 hours

My doctor says this is normal and every forum I've asked says something similar. I know the recommended 2 hour mark is under 140, but my concern is that if my 2.5 hour mark is ~102-110, then my peak must be pretty high. Is this truly "normal" and are the meals I'm eating slow-release carbs?
 
Fasting blood glucose > 125 mg/dl (7 mmol/l) is diagnostic of diabetes (one abnormal result if symptoms are present, two otherwise).
Further, postprandial BG > 200 mg/dl (11.1 mmol/l) is diagnostic of diabetes whilst postprandial BG > 140 mg/dl (7.8 mmol/l) is diagnostic of impaired glucose tolerance. [Oxford Handbook of Endo. and Diabetes]

Quick Google search (which, I assume, you already did, so this won't be anything new) suggests that normal postprandial BG is < 120 mg/dl, with about half the population < 100 mg/dl (then again, it was a extremist low-carb website so have an agenda)
 
I'm just worried since I've read that higher post prandials with normal fasting is a very early sign of type 2. But thanks guys
