Well that is down to you really if you can eat potatoes ok a lot of the members here can't eat potatoes at all and others can have a small portion of preferably new potatoes. It is said that sweet potatoes are a better option they are slower turning to glucose I think and you can cook however you like them

Out of the two, sweet potatoes are better but in saying that it would be a good idea to test you BS before and 2 hrs after eating to see the effect on your BS. Out of the cooking options mashed would be the worst option.

If you can get away with eating sweet potatoes, the Portion size is going to be key.

I can get away with just a 20g portion, but only once a day and wouldn't mean restricting other carbs to compensate, I then switched to LCHF and ditched all the main sources of starchy carbs, bread, rice, pasta, potatoes etc.

Most of my carbs now come from green veg and mixed berries.

Best course would be to test and see how much the potatoes do effect your BG.
