I make a really thin 'egg pancake' - two eggs beaten with no added water or milk, cooked in a large non-stick frying pan - then top with whipped cream and Josephs low-carb maple syrup and fold in half. Yummy for lunch when I want something sweet and good for a quick pud sometimes too.
Anythings good in an omlette. I separate my yokes and whites, mix my whites like i'm going to make a marangue and then fold in the yokes (keeps it v fluffy) yum yum yum :lol: :lol: :lol:
I put all sorts in my omelettes but a favourite is diced chicken, red pepper and dollops of Philadelphia cheese with garlic and herbs. Whack it under a hot grill, once the underside is cooked normally, in a pan on the hob and when it starts to slightly brown......slide onto a plate and enjoy!!!
