Hang in there. Everyone is different and reacts to blood sugars differently. Sometimes I think my pancreas decides to produce a little insulin just to throw me off or keep me on edge a little
If you are not on a continuous CGM device, consider getting one... it will strongly help you monitor sugars and also see how your body copes with certain foods.
I recently had a low episode that lasted for nearly an hour. It was not due to an overdose of insulin... had myself some juice... waited 15 minutes with no fluctuation in sugar levels.... had another serving of juice... waited another 15 minutes with again no fluctuation... continued to repeat the process until I saw a rise in blood sugars.... monitored it and when I saw levels hit 8.0 and rising, gave myself a small dose of insulin (5 units)... leveled off near 10....
It's a pain but sometimes high blood sugars are better than going hypoglycemic
I use a Dexcom by the way... feedback every 5 minutes
