Quick help chia seed & coconut milk pudding

Hi I have made this today for first time - no sure it's for me but anyway - so how long will it keep in the fridge - looked on the tin of coconut milk and it says once opened use immediately ( which is what I have always done as I only used it for curries in the past) - will it keep a couple of days?- going to have it with some berries tonight but I have far too much for 1 portion

Yup. I find chia seed pud keeps 3-4 days, and the coconut milk part was tinned, so doesn't need cooking before use...

 
Thanks @Brunneria - I know you'd know y know - should have had a little wager - well yet to decide if I like it but at least I get a few goes to try lol
 
@Brunneria - well I had it -interesting taste couldn't get the coconut flavour much but was creamy - did I dislike it? No did I like it? Not sure yet I think it may grow on me - may make some ice lollies with it - had it with a few blackberries it was a change from the creme fresh I usually have but not as sickly as fresh cream which I'm not so keen on
 

I have made a couple of really successful chia puds, but the fruit ones always strike me as a bit... um... meh.

My good two were

Lemon: Basically, lemon juice and water and sweetener (get the taste right before adding the chia), then serve with cream. I like it really strongly tangy and not very sweet, but YMMV

Chocolate: make up the most fab hot choc you can imagine, then add the chia.

Leave them both for about 4-8 hours to let it go really gloopy.

What can I use instead of almond or coconut milk for chia pud? All recipes I've hunted say the above and I don't want to chuck half a carton away if I can avoid it! Unless almond milk is freezeable?!

I buy the small tins of coconut milk - or you could make the full carton up and freeze half of it as lollies
 
Herb tea
Lemon juice (diluted)
Lime juice
orange juice
Even no sugar fruit squashes
Low carb hot choc => choc pudding

Basically any liquid you want a pud to taste of...
 
I've got my first attempt in the fridge - I've used almond milk and cream instead of coconut milk. And so we wait....

Came out ok. I've split into three portions, topped with whipped cream and flaked almonds.
