quinoa anyone?

Aa we have coeliacs as well as diabetes in the family i have been considering using quinoa in place of rice or potatoes. Does anyone have knowledge or experience on using this as part of diabetic diet? I know the Gi is said to be 18,;it is easy to cook and some great recipes out there.
 
Quinoa is great and easy to cook! I'm a type 1 and occasionally swap it for wholegrain rice. It's high in protein and hasn't really affected my sugars. I usually just cook it in vegetable stock!
 
I have just discovered Quinoa and I love love love it! So delicate and I love the texture of it too, I had 30g of quinoa the other night with chicken wrapped in bacon with cheese and roasted veggies. Beautiful old munch it was too!
 
quinoa and try bulgur wheat as well.
