Thinking of cooking a shepherds pie. But I am stuck on the potato topping sub.
Not sure cauliflower mash or celeriac mash will work because they tend to be so wet. I don’t want a wet mash.
Is there a good sub that is nice and dry like potato would be or how do I make celeriac ir cauliflower mash drier? So it’s not just slop
I do my cauliflower mash by boiling or steaming the cauliflower until not quite cooked but not hard, drain thoroughly and shake to get all moisture out, you could roll it up in a clean tea towel and wring it, blitz it add butter, cream and grated nutmeg to taste and I haven't had it get sloppy. How are you cooking yours?
Cauli and celeriac are my go to toppings. Drain thoroughly and leave to steam. Mash roughly leaving chunky bits use lots of butter and black pepper. Add cheese to the top before puttin in the oven to brown.

Usually if I use cauliflower I just cook in water then mash.
Today I booked swede let it drain and missed in cheese and butter.
When eventually in oven the butter was just a layer of grease on the top so I spooned it off and threw away.
Was actually really tasty. Definitely have again.
