Slightly high morning BS on intermittent fasting

Hrllo everyone,

This is my second post on this forum.
To make a story short, i was diagnosed with T2 diabetes one year ago despite my normal BMI and age (37 years old). But I'm a TOFI (thin outside fat inside) with metabolic disorders at diagnosis (high TG, LDL, B etc.). I was GAD65 negative (so no LADA).
After following low carb diet, I could reverse my diabetes within 3 weeks after diagnosis and without medication.

Since then, no issues for over a year, always BS under 5.5 (fasting) and no more than 7 (postprandial).

But when I start the day without breakfast, my FB jumps to around 6.5 always then decreases slowly around 10 or 11 am.

Now I'm fasting for ramadan, no food from midnight, but when I wake up and after walking for a while my fasting is 6.6 around 10 am to 1 pm. Then starts to decrease and by 2 pm is under 5.2.
My postprandial at dinner (after 1 or 2 hours) is around 6.3 despite some more carbs then usual.

My question is: why this surge in blood glucose in the morning while fasting for more than 12 hours then a steady decrease?
If it is only down phenomenon, this can lead to misdiagnosis if I go check again at the lab (as waking up and going to lab without breakfast will raise BS).
