Ice-cream making's going well - I will soon be looking for tips in the weight loss section at the rate I'm going :lol:
AliH - I've made a number of ice creams now, but the vanilla one I originally posted about was:
200ml Single cream
400ml Double cream
15g Splenda
1 tsp vanilla extract
2 Tbs daVinci sugar-free vanilla syrup
Mixed it all together with a stick blender and poured it in the ice cream maker for 40 minutes - delicious! Made about 10 portions at about 3g carb per portion, so I've now halved the ingredients to make less (and hopefully control my urge to eat it all :lol: )
The one I've just made (and eaten):
100ml Single cream
200ml Double cream
12g Splenda
1 tsp peppermint extract
50g 85% dark chocolate
Mix everything except the chocolate together with a stick blender. Pour it in the ice cream maker for about 25 minutes. Chop the chocolate into small chunks. Once the ice cream is done, take it out of the ice cream maker and put it in a freezer tub. Mix the chocolate through it and put it in the freezer - or eat it :lol: This is my favourite so far! It has about 5.5g carb per portion, so not too bad, but does mean I have to use a little insulin to cover, so can only really eat this one with a meal when I'm jabbing anyway. I expect most Type 2s would get away without this raising the BGs, though.
I've been making them without egg as I'm not sure eating raw egg is a good idea for diabetics - but I might be wrong about that! My next experiments will involve making a custard-style ice cream - I'll have to see how easy it is to cook the custard without it seperating. Wish I'd bought this ages ago - I think I'm addicted :lol:
